Earlier this year, I quit my job & made my hobby a full time job. Having previously worked in a restaurant kitchen (for almost 8 years) I now work in my shipping container workshop, making Japanese inspired, handmade kitchen knives.
All of my knives are handmade & I use the highest quality materials I can get my hands on. Because of this, the process of making a knife can be take some time to complete. In future articles, I will be giving a behind the scene look at how I make my knives & will provide regular workshop updates.
I will also be using my background in food to develop recipes that show how the different styles of knife that I make can be used to create & prepare food. Be it a serrated bread knife to slice sourdough, a honesuki to prepare a chicken or a sujihiki to carve a joint of meat.
